Sometimes its not so easy to get fresh fruit not to mention fresh
tropical fruit. A really good juice company, Looza, makes really
fresh tasting tropical fruit nectars.
I adjust the sugar so that the sorbet has enough to resist forming
large ice crystals and has enough sweetness to taste sweet after
freezing. Crack up the Ice cream maker and let’er rip.
When the sorbet reaches soft serve consistency freeze so that
it tightens up a bit. Take out of the freezer 5 minutes before
serving. Nice and tangy.
